2 c. sugar
1 c. shortening
4 eggs
2 tbsp lemon extract
3 c. sifted all-purpose flour
1/2 tsp salt
1/2 tsp. baking soda
1/2 tsp baking powder
1 c. buttermilk.

Icing:
2 1/2 c. sifted confectioners' sugar
5 tbsp lemon juice
1/2 tsp salt

Directions:
Directions:
Cream sugar and shortening until light. Add eggs, 1 at a time, beating well after each. Add lemon extract. Combine flour, 1/2 tsp salt, baking soda and baking powder. Beat into batter alternately with buttermilk, beginning and ending with flour. Pour into greased and floured 10-inch tube pan. Bake at 325 for about 1 hour or until cake tests done.

While cake bakes, make icing: Mix together confectioners' sugar, lemon juice and 1/2 tsp salt. Remove cake from oven; pour icing over cake. Return to oven for 3 minutes. Remove from oven and cool for 10 min, then turn out.
