2 medium sized cucumbers
2 tsp. salt
1/2 c. vinegar
5 T. sugar
2 tsp. fresh ginger juice
1 tsp. sesame seeds

Directions:
Directions:
Peel cucumbers, leaving 4 green strips. Cut in two lengthwise, remove seeds and slice fine. Place in bowl, add salt, and let stand 10 minutes. Squeeze off excess water and pack in sterilized quart jar. Mix vinegar, sugar, ginger juice, and sesame seeds. Bring to a boil. Pour over sliced cucumbers, let cool and cover.
