Moussaka Recipe

6 eggplants, sliced 1/2 inch thick

2 T. olive oil

1 large onion, diced

2 tomatos

6 potatos, mashed

Custard Topping:
5 T. flour

2 eggs

1/2 c.cream

1 c. water

1/2 t. white pepper

dash of nutmeg

1 c. freshly grated Parmesan cheese

2 t. lemon juice

1. Preheat oven to 450 F.

2. Boil potatos and mix to be mashed potatos.

3. Heat olive oil in large skillet. Sate eggplants with garlic. Take out. Satee onion, garlic, tomato and eggplants. Season with salt and pepper.

4. Make two layers of potato then eggplant 2 times. On top custard topping and cheese.

5. 30-40 min.
