2 lbs. ground chicken
1 onion, chopped, 1 pkg. Taco Seasoning
1 pkg. dried Ranch Dressing mix
1 can Shoepeg corn, 1 can Mexican style corn
1 can kidney beans or black beans
1 can chili hot beans, 3 cans Rotel tomatoes
1 sml.. can sliced black olives, drained (optional)
Toppings: Shredded cheddar, Fritos, sour cream

Directions:

Brown chicken and onion. Drain well
Add the rest of the ingredients, except for the toppings.
Cook in a crock pot or Dutch oven on simmer all day.
