64 oz. chicken broth (I use Swanson's fat-free)
3 chicken bouillon cubes
2 stalks celery, diced
1 Tbsp. dried celery flakes
1-2 carrots chopped in food processor or grated
1/2 C Orzo pasta, (Rosa Marina #31)
2 Roma tomatoes chopped (optional)
1 C fresh spinach, chopped
Parmesan cheese

Meatballs:
1/2 lb. gr. chicken
1/3 C finely chopped onions
1/3 C fine breadcrumbs
1 egg
1 Tbsp. dried parsley
1/2 tsp. dried basil
1/4 tsp. oregano
1/4 tsp. Italian seasoning
dash of garlic powder
2 tsp. Worcestershire sauce

Soup:
Simmer first 4 ingredients in broth. Add water if necessary.
Cook and drain pasta, add to broth. Simmer while meatballs are being made.

Meatballs:
Combine all ingredients in a large bowl and mix thoroughly. Form marble sized meatballs.
Brown in a large fry pan. Remove and drain well on paper towels. (Can brown under broiler).
Add to soup with the spinach and tomatoes. Simmer soup 15 -20 mins. or until meatballs are cooked through.
Serve topped with Parmesan cheese

This recipe was passed on to my sister from Aunt Fanny, a great Italian cook in our small Pennsylvania town. Taste as you go and adjust flavors to suit your taste.
