1/2 c. brown sugar
1 tsp. pumpkin pie spice
3 lbs. sweet potatoes (yams)
2 tbsp. orange juice
1 tsp. vanilla extract
2 tbsp. butter/margarine, cut up

Directions:
Directions:
Preheat oven to 350F.
Combine brown sugar and pumpkin pie spice in a large bowl; add potatoes and toss well. Spread in 9x13" baking dish.
Combine orange juice and vanilla; pour evenly over potatoes. Dot w/ butter. Cover and bake 40 min. Remove from oven and stir. Bake uncovered an additional 15-20 min. or until potatoes are fork tender.
