6-7 cups cooked, mashed sweet potatoes (about 6-7 potatoes)
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup butter

Topping:
1 cup brown sugar
1/3 cup flour
1/2-1 cup pecans, chopped
1/2 cup butter, melted
1 cup coconut, optional

Directions:
Directions:
Boil potatoes with peeling on them. When tender and you can handle; scrape off peeling, mash and measure. Add beaten eggs, melted butter, vanilla and sugar. Mix well. Pour into buttered 9X13-inch casserole dish.

Topping:
Mix all ingredients together and crumble on top of potatoes. Bake at 350 degrees for 30 minutes or until hot.
Note: Fill squeezed orange halves (about 8 oranges) with potatoes, add topping and bake. May top with marshmallows.
