2/3 Cup Soft Shortening
2 Eggs
1/4 Tsp. Salt
1-3/4 Cups Flour
1/2 Cup Sugar
1 Cup Milk
3 Tsp. Baking Powder
1 Cup Cornmeal

Directions:
Directions:
Cream shortening and sugar, add eggs and milk. Mix well then add the other ingredients, adding the corn meal last. Bake in a 9x9 greased pan at 400 until done.

A variation on this is to add a small can of corn, a small can of diced green chilies and some grated cheese. Makes really good chilie cheese corn bread.
