1 1/2 lb hambuger meat
1 large potato
1-2 dozen corn tortillas
1/2 c shredded cheddar cheese
garlic (2 cloves or 1/2 tsp powdered garlic)
2-3 tomatoes
shortening or vegetable oil

1. Brown the hambuger meat and get rid of the excess grease.

2. While the meat is browning peel and dice your potato into 1 inch cubes.

3. Mince two garlic cloves and add garlic and salt to the meat along with the potatoes and enough water to cover the mixture. (Cover loosely with a top.)

4. Let simmer until potatoes are tender to the touch and the water has evaporated. Then just leave the top on to keep it hot.

5. While the meat and potatoes are cooking heat the shortening or oil to medium high in a frying pan (about 1 inch or so).

6. When the oil is hot, fry the tortillas for a minute or two on both sides- or until crisp.

7. Shred cheddar and lettuce and chop your tomatoes.

8. Assemble your tostadas- meat, cheese, lettuce, and tomatoes -enjoy!

I grew up eating these. And they have always been one of my favorite foods. It is also one of the only meals I didn't have to alter to gf.
