1 3-4 lb pork loin
2 tbsp lemon juice
Salt, pepper to taste
3-5 Cloves of garlic, thinly sliced
1 small can of mushrooms

Directions:
Directions:
Salt and pepper pork loin. Add to baking pan. Cut small slits in the loin. Sprinkle lemon juice over meat. Stuff slits with slices of garlic, more or less to your taste. Cover with mushrooms. Cover with aluminum foil. Bake at 325 for one hour and 10 minutes or until juices run clear or meat therrmometer registers 160. Remove foil after about 30-40 minutes. Continue cooking. Remove roast to another pan, reserve drippings.

To make gravy, remove drippings to small sauté pan, heat. Combine 1 tsp cornstarch and 1 tbsp of cold water. Add cornstarch mixture to sauté pan, heating until thickened. May use small amount of water to increase volume of gravy, but increasing water will lessen flavor. Serve with roasted loin.
