2 cups of cooked rice (I save leftovers and use them)
3-4 eggs scrambled
½ medium onion
½ to 1 cup of meat (country ham, sliced ham, Easter ham, shrimp…)
¼ to ½ cup Soy Sauce
Cooking Oil

Directions:
Directions:
Rice should be cool. If recently cooked, make sure to cool the rice before using it in this recipe. Hot rice gets too soft. Soft scramble eggs in 1 tbsp of oil in medium hot skillet. Remove eggs. Add 1 tablespoon oil to skillet and sauté onions until they are translucent. Remove from pan. Add 1 tablespoon oil to skillet and sauté ham or shrimp until warm. Add rice, eggs, onions and soy sauce to taste until all ingredients are warm. Remove from heat and serve. Great leftover or as lunch the next day.
