Ingredients:  
1 can shoepeg corn
1 can black beans, drained and rinsed
1 firm-ripe avocado, chopped
2 plum tomatoes, chopped and seeded
red onion, chopped

Whisk together marinade:
cup olive oil
cup red wine vinegar
tsp. salt
tsp. pepper
tsp cumin
3 T. sugar
1 clove garlic, minced

Directions:

Pour marinade over above ingredients, stir gently and chill 2-3 hours. Serve with tortilla chips.
