8 oz sharp shredded cheddar cheese
8 oz Colby/Jack shredded cheese
4 oz jar pimento, drained
3/4 cup Dukes mayo
salt
pepper
sugar

Directions:
Directions:
Mix both the cheeses. If you like Pimento Cheese creamy, use the food processor to cut it up a bit more. Or, use your chopper. After adding the cheeses, mix in the mayonaise. You may have to alter this a bit, depending on your taste. I start with about 1/2 cup and then add more until I get a smooth consistency. Sprinkle salt and pepper. If you have a pepper grinder and fresh pepper, this adds a nice flavor. Sprinkle in a bit of sugar, not more than a couple of teaspoons. If you make this the night before, check the moisture content before serving. You may need to add more mayo. This recipe doubles easily and is great on a sandwich or a whole wheat cracker like Triscuit.

I borrowed this recipe from a favorite cookbook. It calls for Chayenne pepper, but I found that to be overpowering.
