1 box of lemon flavored cake mix
1 20 oz. can of crushed pineapple
1 large container of cool whip
1 tsp. lemon flavored extract
2 eggs
1 pkg. vanilla instant pudding
1 c. milk
1 c. shredded coconut
chopped nuts
cherries

Directions:
Directions:
In a bowl, mix the cake mix with 1 1/3 cups of pineapple juice (taken from the can of pineapple), 2 eggs,1 tsp. lemon extract and spread onto a cookie sheet baking at 350 for 15 minutes.
Let cool.
Mix the vanilla instant pudding with 1 cup of milk when thickened add the cool whip and the drained crushed pineapple. Spread this on top of the cake mix and sprinkle with coconut, crushed nuts and cherries.
