1/4 c. (1/2 stick) butter
1/4 c. chopped onion
1/4 c. flour
1 can (14 oz) chicken broth
1 can (12 oz) evaporated milk
3 medium baking potatoes (baked or microwaved)

Toppings: cooked & crumbled bacon, shredded cheddar cheese, sliced green onions or chives.

Melt butter in large saucepann over medium heat. Add onion, stirring occasionally for 1-2 minutes until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin) and mash in separate bowl. Add pulp to broth mixture. Cook over medium heat, stirring occasionally until mixture come just to a boil. Dice remaining potato and potato skin; add to soup. Cook on low heat for about 5 minutes. Spoon into bowls and garnish with desired toppings.
