2 lbs. ground sirloin
1/4 c. cornstarch
2 c. beef broth
1/2 c. Dijon mustard
2 carrots, peeled and chopped
2 parsnips, peeled and chopped
1 whole onion, peeled and chopped
1 c. frozen peas
8-10 potatoes

Directions:
Directions:
Boil the potatoes until tender. Mash with butter, cream, salt and pepper to taste. Set aside and keep warm. Saute the sirloin until brown. Mix in cornstarch, beef broth, mustard and vegetables. Simmer on low heat for 20 minutes or until vegetables are tender. Season to taste. Transfer mixture to one large casserole (or individual dishes). Top with mashed potatoes and brown under the broiler until hot and the potatoes are just lightly browned.
