1 1/2 lb. lobster meat, bite size pieces
1/2 lb. butter
2 green onions, sliced
1/2 green pepper, diced
1/8 c. pimentos, diced
1 tsp. paprika
1/4 c. sherry wine
1 1/2 c. milk
4 oz. mushrooms
4 oz. cheddar cheese, grated
2 tbsp. flour
Cayenne pepper, to taste
Salt, to taste

Directions:
Melt the butter. Add green onions, green peppers and mushrooms, saute. Add paprika and lobster meat. Mix in flour. Add sherry wine, milk and cayenne pepper. Simmer for 10 minutes. Add cheddar cheese and stir until melted. Serve over rice or in pastry shells.
