2 shallots, minced
Grated zest of 1 lemon
1 1/2 tbsp. fresh lemon juice
1 c. white wine
Salt to taste
13 tbsp. unsalted butter, chilled and cut into cubes

Directions:
Directions:
In a sauce pan melt 1 tbsp. butter. Add shallots and zest. Saute, stirring 4-5 minutes. Add juice and wine, reduce heat to low, and simmer until reduced to 1/3 c., 20-25 minutes. Add butter, a few cubes at a time, whisk until blended before adding more. Strain sauce through a fine-mesh sieve.
