3 lbs. eye of round roast
1 Tbsp. Italian herb seasoning
1/2 tsp. garlic powder

2- 14 oz. cans beef broth
1 tsp. Italian herb seasoning, 2 pepperonis

Directions:
Directions:
Rub seasoning and garlic on top of roast and bake at 325º for 1 hour.
Remove from oven and add 1/2 cup water.
Let rest until cool enough to slice.
Trim roast of any fat and thinly slice meat.
In large pot add juices from roasting pan, sliced meat, beef broth, pepperonis and Italian seasoning. Cover and simmer 1 hour.
Serve on Italian bread with sautéed green peppers
