2 T. chopped onion
2 T. chopped celery
2 T. bacon fat or any other shortening
2 T. flour
1/2 c. milk
1 1/2 cups cooked rice
1 1/2 to 2 cups cooked ground ham
4 lg. green peppers
1/4 c. gratted cheese

Directions:
Directions:
Saute' the onion and celery in shortening. Blend in the flour and milk, stirring constantly over medium heat until smooth. Fold in the rice and ham. Cut the stem end of the pepper off and remove the seeds and core. Fill with the hot mixture and top with the cheese.

Bake at 350 for 30 minutes with 1 cup tomato juice or tomato sauce , until peppers are tender.
