1-1/2 c. chopped dates
3 c. hot water
1-1/2 sticks butter or marg.
1-1/2 c. water
1 c. pecan pieces
2 extra-large eggs
1-1/2 t. baking soda
1-1/2 t. vanilla
1/4 t. salt
2-3/4 c. flour

Directions:
Directions:
In med. bowl, combine dates and hot water. Let stand 10 mins. Drain and discard water. Cover and refriegerate dates until cold --Heat oven to 350 .
Line med. muffin cups with cups, or lightly grease
In lg. bowl, beat better and sugar until creamy. Add water, pecans, eggs, baking soda, vanilla and salt. Mix until well-blended.
Add flour. Mix until dry ingredients are moistened. Fold in COLD dates. Spoon into muffin cups.
Bake 20-25 mins. ur until wooden tooth pick inserted in center comes out clean. Let stand a few mins. before removing.
