2 c. whole wheat flour
1/2 c. sugar
1 T baking powder
1/2 tsp each--baking soda, salt, cinnamon
1/4 tsp. nutmeg
1-1/2 c. mashed yams (or sw. potatoes)--I used canned in lt. syrup and rinsed)
1/2 c. water (+2T if needed)
1/2 c. raisins (or any dried fruit)

Directions:

Preheat to 375 degrees
In large bowl, mix flour, sugar, b. soda, b. powder, cinnamon, nutmeg) --salt opt.
Add yams, water and dried fruitStir until lightly mixed
Lightly coat muffin pans w/veg. oil spray
Fill cups to top, Bake 25-30 mins or until top of muffin bounces back when pressed lightly.
Let stand 1-2 mins before removig from pan.
Serve warm, or store in airtight container, or freeze)
