2-1/4 c whole wheat flour (or 1 c. ww, 1 c. white)
1/2 T baking powder
2 c soy milk (sweeter)
4 ripe med. bananas-diced
1 can pineapple tidbits (with juice)
3/4 - 1 c. dried cranberries or raisins
3 c. All-bran extra fiber cereal
Flaxseed (optional)

Directions:
Directions:
Preheat oven 400 degrees
In large bowl, add fruit to soy milk and mix together
In med. bowl, combine flour, baking powder and All-bran cereal. Then add dry ingredients to the large bowl of fruit and milk. Mix well.
Divide mixture into 6 Texan-size muffin cups/tins, then prinkle flaxseed on top. BAKE 40-45 mins.. If you use 12-cup muffin tin, then reduce time.
