1/4 cup balsamic vinegar
2 Tbls. olive oil
1 garlic clove, minced
2 Tbls. finely chopped fresh basil
1 tsp. salt
1/4 teaspoon or more hot sauce
2 cups pitted fresh sweet cherries
1 cup thinly sliced Vidalia onion
2 each yellow and red bell peppers, halved, seeded

Directions:

Combine vinegar, oil, garlic, basil, salt, and hot sauce. Reserve 2 Tbls. of this mixture for peppers. Toss halved cherries and segments of onion rings in remaining mixture.
Brush peppers with the vinegar mixture and cook in a lightly oiled grill over medium heat 10 to 12 minutes. Turn and brush peppers with dressing halfway through grilling.
Place peppers in a paper or plastic bag and close tightly. Let stand for 10-15 minutes. Remove from bag and peel off skin. Slice the roasted peppers into 1/2 inch strips and mix with cherries.
