2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup cold butter
1/2 cup chopped dried apricots
1/2 cup chopped pecans
1 teaspoon grated orange peel
1 cup plus 2 tablespoons heavy whipping cream, divided

Devonshire Cream:
1 package (3 oz) cream cheese, softened
1 tablespoon powdered sugar
1/2 teaspoon vanilla
1/4 cup heavy whipping cream

In a small mixing bowl, beat the cream cheese, powdered sugar and vanilla until fluffy. Gradually beat in enough cream to achieve a spreading consistency. Cover and chill for 2 hours.

For the scones, combine the dry ingredients in a bowl. Cut in the butter until the mixture resembles fine crumbs. Add apricots, pecans and orange peel. With a fork, stir in the whipping cream just until moistened. Turn onto a floured surface; knead 5-6 times. Divide in half; and roll into a 6 inch circle; cut each circle in 8 parts. Or, use a scone pan which is much easier. Bake at 375 for 13-15 minutes. Serve with Devonshire cream and jams.

To make coconut scones just exchange the apricots for 1/2 cup coconut. Also remove the grated orange peel. Grated lemon peel could be substituted. Also, dried cranberries could be exchanged for the dried apricots. There are many variations that can be made with this recipe.
