1 cup flour
3 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons cold butter, cut in small pieces
1 cup mashed sweet potatoes
2-4 tablespoons milk

Directions:
Directions:
Preheat oven to 425. Combine dry ingredients in a medium bowl. Cut in the butter until it resembles coarse meal. Stir in sweet potatoes and just enough milk to make a ball of dough. Turn dough onto a flour covered surface. Roll about 3/4 inch thinck. With a 2 1/2 inch cutter, cut out biscuits. Bake for 14 minutes. Let cool for 1 minute, then remove to rack to completely cool.
