4 ripe mangoes, peeled and cut into 1/2" cubes
1/4 c honey
1 tbsp freshly grated lime zest
1 tbsp freshly squeezed lime juice
1/3 c heavy cream
6 Cardamom Biscuits (see recipe in book)
8 fresh mint leaves

Place mangoes, honey, lime zest, and lime juice in top half of double boiler over medium-high heat. (You can simulate a double boiler by fitting a bowl into a larger saucepot filled with water.) Simmer, stirring occasionally, until mango cubes are softened, about 8 minuets. Set aside to cool.

Whisk cream in small bowl until soft peaks form. To assemble shortcakes, split biscuits with fork. Spoon 1/2 cup of the mangoes over bottom half of biscuit. Top with other half, a dollop of whipped cream, another 1/2 cup of the mango, and a mint leaf. Repeat with remaining ingredients.
