1 T. curry paste
2 tsp. oil
4 chicken breasts, diced
1 T. sugar
2 tsp. curry powder
2 cans coconut milk
1 T. salt
4 med. potatoes, diced

Directions:
Directions:
Mix curry paste and powder in a small bowl. Heat oil over medium-high heat. Add in paste mixture and a little of the coconut milk. Bring to boil in a large skillet. Add rest of coconut milk, salt and sugar. Bring to boil. Add chicken breasts and potatoes. Simmer until potatoes are tender and chicken is cooked. Serve over rice.
