2 T. butter
1/2 large onion, diced
2 carrots, grated
1 large potato, grated
1 14oz. can chicken broth
1 14oz. can water
1 tsp. salt
1/2 tsp. pepper
1 13oz. can chicken, or 2 c. diced chicken
1-2 c. grated cheese

Directions:
Directions:
In a large pot, saute onion in butter. Add carrots, potatoes, broth, water, salt, and pepper. Bring to a boil, then cover and simmer on low for about 10-15 minutes. Add canned chicken and more water, if necessary. Stir in cheese. Serve.
