3 c. peeled diced potatoes
1/2 c. peeled chopped carrots
1/2 c. chopped celery
1/2 c. chopped onion
1tsp. parsley flakes
1 chicken bouillon cube
1/2 tsp. salt
1 1/2 c. milk
2 tbsp. flour
1/2 c. melted margarine
1/2 c. velveeta cheese, cubed
small chips of fried bacon (optional)

Directions:
Directions:
In sauce pan combine potato, celery, carrots, onions, parsley flakes,bouillon cube, salt, and cover with water. Cook until potatoes are just tender. Add milk. Melt margarine in separate pan, add flour to make a roux. If needed add some soup to margarine/flour to thin it out. Add to soup. Stir until thick as you like. Add cheese and stir till melted. Add bacon and serve.
