1 1/2 c sugar
1 1/2 c plain flour
1/4 tsp salt
1 tsp baking powder
1 1/2 tsp vanilla
1 8 oz bottle maraschino cherries and juice
4 eggs
1 1/2 lb. pitted dates
1 lb brazil nuts (shelled)
1 lb english walnuts (shelled)

Directions:
Directions:
place all dry ingredients in a bowl mix well. add nuts and dates ( whole or chopped your choice)
and stir well. Beat eggs, add to mixture, toss in cherries and juice, add vanilla. mix well. pour batter into 2 greased and floured loaf pans. Bake at 250 for 2 hours. do not overbake. you can decorate top with candied cherries or pineapple. pour over cake while hot rum or any other spirits you have if you want to, to help cake age. Wrap well and store.

This recipe is correct, no shortening is needed. this makes a very good fruit cake. I'm sure you will like it.
