4 c. diced carrots
4 c. diced celery
24 cups liquid (potato water, beef, chicken, or ham stock, or plain water)
2 bay leafs
1 tsp thyme
2 tsp caraway seed
6 lemon peel strips
2 tsp salt
1/2 tsp white pepper

Directions:
Directions:
Heat 1/2 cup of butter in large pot. Add 4 cups onion and 4 tsp. garlic. Cook until onions are tender. Add one 12 oz. can tomato paste and 1/4 c. vinegar. Stir in Add the ingredients above and stir well. Now add yhou all important jar of "A LOTTA LOVE" beans which consists of the following: green split peas, great northern white beans, small lima beans, black beans, pearl barley, lentils, large lima beans, and small red beans.
Simmer for 2-3 hours or until beans are done. Cooking time could be reduced by soaking beans the night before. Remove bay leafs and lemon peel before serving. A ham bone or chopped ham greatly enhances the flavor. No salt is needed if you use ham in the soup. This jar makes enough for two 20 serving portions. Make half at a time if you so desire. It freezes well.
