2 lbs. shrimp, peeled and deveined
4 tsp. pepperoncini oil (recipe follows)
Salt and black pepper to taste
Pepperoncini oil:
1/2 c. olive oil
1/4 c. finely chopped pepperoncini
1 T. minced garlic
Salt and black pepper to taste

Directions:
Directions:
Make oil: Heat the olive oil in a medium, heavy skillet over medium heat. Add the pepperoncini and garlic and saute until fragrant, about 2 minutes. Season with salt and pepper. Pour the oil (do not strain) into a bowl and cool to room temperature. To cook the shrimp: Toss the shrimp in a large bowl with the pepperoncini oil. Sprinkle with salt and pepper. Saute or grill the shrimp on skewers until just cooked through, about 2 minutes per side. Coat the cooked shrimp again with a small amount of the oil and serve. Good with a fruit salsa.
