1/4 c. extra-virgin olive oil
1 tsp. unsalted butter
1/2 onion, minced
2 oz Prosciutto, minced
1 lb. fresh or frozen peas
1/4 c. chicken stock or water
Salt and black pepper

Directions:
Directions:
In a large skillet with a lid, heat oil and butter over medium-high heat. Add onion and prosciutto and cook, stirring, until onion is wilted, about 2 minutes. Add the peas and stock, lower heat to medium, cover, and cook, stirring occasionally, until the peas are tender, 5 to 10 minutes. Season with salt and pepper to taste and serve hot or at room temperature.
