4 c. heavy cream
3 to 4 oz. crumbly Gorgonzola
3 T. Parmesan cheese
3/4 tsp. kosher salt
3/4 tsp. black pepper
3 T. minced fresh parsley

Directions:
Directions:
Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45-50 minutes, until it's thickened, like a white sauce, stirring occasionally. Remove from heat and add remaining ingredients. Whisk rapidly until the cheeses melt, and then serve. Instead of Gorgonzola, this sauce can also be flavored with mustard and horseradish.
