Pick out the most perfectly portioned turkey or chicken for your needs. If frozen, thaw out in the refrigerator. Take out the innards and the neck from the neck and butt cavity.....girls take note. Thoroughly wash the bird inside and out. Then dry the bird with paper towels. Salt the inside and you may or may not choose to stuff the cavities with onion, carrots, celery and herbs. We did last year, but did not in 2007. It does add flavor. You may choose to put the dressing in the cavities, or not. This is your choice, we did. Rub the bird all over with butter on the outside and then cover with foil for the first hour or so of baking. Bake the bird according to the weight, 20-30 minutes per pound, or until a thermomether reads 180. You should cook all the innards and neck in water with the same veggies: onion, celery, carrots and herbs using the water to flavor your dressing and or gravy.
