1 lb ground turkey
1 large onion
1 T. olive oil
4 T. chili powder
1 28 oz. can diced tomatoes
2 15 oz cans chili beans
1 can mild or spicy green chilis
1 1/2 bottles low sodium V8 juice
Salt and pepper to taste

Directions:
In large soup pot, brown turkey and onion in olive oil. Add chili powder and brown a few minutes more. Add remaining ingredients and simmer. Adjust seasonings.

Personal Notes:
Personal Notes:
When available, I buy tomatoes and beans with chilis and the spicy V8 juice. Seasonings can easily be adjusted. Top with sour cream or cheese. Serve with corn bread with can of mild green chilis added.
