2 c sugar
2 c flour
2 tsp cinnamon
1 tsp salt
1 1/2 c vegetable oil
4 eggs
3 c grated carrots
1 tsp soda

Directions:
Directions:
Add oil, eggs & carrots to dry ingredients and mix well. DO NOT USE ELECTRIC BEATER. Pour into greased and floured 9x13 pan. Bake for 30 to 40 min.

Icing: Blend one 8 oz pkg cream cheese with 1/4 lb of butter or margarine with 3 1/2 c powdered sugar & 1/2 c chopped walnuts, 2 tsp vanilla. Sprinkle with chopped nuts, store cake in refrig after icing. Will keep for a long time, very moist.
