3 large bunches broccoli
Salt and freshly ground pepper
1/2 c. plus 6 T. unsalted butter
2 T. finely chopped orange zest
3 cloves garlic, finely chopped
3 c. fresh white bread crumbs

Directions:
Cut off the broccoli stems and separate heads into florets. Bring a large pot of water to boil. Salt water and add the broccoli. Cook until just tender, 4-6 minutes. Drain and transfer to bowl of ice water. When cool, drain again and pat dry. In a large frying pan over medium-high heat, melt the 1/2 c. butter. Add the orange zest and garlic and cook, stirring once or twice, until the butter begins to brown, about 3 minutes. Add the bread crumbs and stir to moisten. Cook, stirring occasionally, until crisp and golden brown, about 5 minutes. Stir in 1/4 t. salt and a generous grinding of pepper. Remove from heat and keep warm. Meanwhile, in a large frying pan, melt the remaining 6 T. butter. Add the broccoli, cover the pan, and cook, tossing and stirring occasionally, until heated through and glazed with butter, 5 minutes. Season with salt and pepper. Spoon broccoli into warmed wide serving bowl. Spoon the bread crumbs evenly over the broccoli and serve immediately.
