2 lbs boneless chicken
1/4 cup Soya sauce
3 tbsp vegetable oil
1 tsp ground ginger
2 tbsp minced onion
14 oz can of pineapple chunks (save juice)
10 oz can of mandarin oranges (save juice)
2 tbsp corn starch
1/4 cup water

Directions:
Directions:
Arrange chicken in a shallow pan. Mix together Soya sauce, oil,
ginger, onion. Pour over chicken and allow to marinate in fridge
for 1 hour.
Drain pineapple chunks and mandarin oranges. Save the juice.
Add juice from from fruit and corn starch and dissolve in water,
together. Place chicken in casserole. Pour sauce over and
bake at 350 for 35 minutes. Just before serving, add fruit.
Serve over steamed rice.
