6 large egg yolks, at room temperature
1/4 c. granulated sugar
1/2 c. dark rum, divided
1-1/2 c. brewed expresso, divided
16-17 oz. mascarpone cheese
30 Italian ladyfingers, or savoiardi (available at most delicatessens)
Bittersweet chocolate, shaved or grated

Using an electric mixer, whisk the egg yolks and sugar on high speed in a metal bowl for about 5 minutes, or until very thick and light yellow. Lower the speed to medium and add 1/4 cup rum, 1/4 cup espresso, and the mascarpone. Whisk until smooth.

Combine the remaining 1/4 cup rum and 1-1/4 cups espresso in a shallow bowl. Dip one side of each ladyfinger in the espresso/rum mixture and line the bottom of a 9x12x2 dish. Pour the espresso cream mixture evenly over the top. If desired, create a second layer of ladyfingers and espresso cream or make a thicker layer of espresso cream over a single layer of ladyfingers.

Cover with plastic wrap and refrigerate overnight.

Before serving, generously sprinkle shaved or grated chocolate over top.
