Beef Burritos Recipe

1 lb beef
1 c. onion
1/2 c. green pepper
1 clove garlic
1/4 c. water
1 tbsp. chili powder
1/4 tsp. cumin
1 c. rice, cooked
4 oz. can chili peppers, drained
8 soft tortillas
1 1/2 c. shredded cheese
2/3 c. chopped tomato
2 c. shredded lettuce

In large skillet cook ground beef, onion, sweet pepper and garlic until meat is brown and onion is tender. Drain off fat. Stir in water, chili powder and cumin. Cook for 5 minutes or until most of the water is evaporated. Remove from heat. Stir in rice and chili peppers. Wrap tortillas in foil, heat in 350 degree oven for 10 minutes to soften. Spoon 1/2 cup filling into each tortilla. Top with cheese and heat for 10 - 12 minutes or until heated through. Add lettuce, tomato and salsa. Enjoy.
