Two large salmon filets

Dill

Stuffing: equal parts of cream cheese, blue cheese, and Italian breadcrumbs

Directions:
Directions:
Prepare filling: Mix a third of a package of cream cheese (can use whipped), with a third of a package of blue cheese, and 1/2 cup Italian breadcrumb.

Slit pocket in filet and stuff with filling. Rub olive oil and dill on fish. Cover with aluminum foil and cook for about 10-15 minutes on the grill or until the fish is cooked on the inside.

Great for summer grilling outdoors. Eric has made this for me several times in the past. It is his own creation. It's a big hit with Nicky, too. Nick is our fish lover. He would rather eat fish than a steak anytime. This is a fast easy recipe and fish cooks in no time. Your guests will be impressed!
