2 1/4 c. flour
1 1/2 c. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. mashed ripe bananas (approx. 3)
3/4 c. buttermilk or sour milk (use 3/4 tsp. lemon juice or vinager with milk let stand 5 min.)
1/2 c. shortening
1 tsp. vanilla

Allow eggs to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour jelly roll pan; set pan aside.
In lare mixing bowl stir together flur, sugar, baking powder, soda, and salt. Add bananas, buttermilk, shortening and vanilla. Beat with an electric mixer on low speed until combined. Add eggs; beat on medium speed for 2 minutes. Pour batter into the prepared pan.
Bake at 350 for 30-35 minutes, or until a wooden toothpick inserted near center comes out clean. Cool cake in pan on wire rack. Frost with desired frosting.
