Ingredients:  
6 medium whit potatoes, peeled
1/2 cup olive oil
juice of 1 lemon
salt and pepper
2 tsp. fresh parsley

Directions:
Directions:
Cut potatoes into bite size. Boil until soft, strain. While potatoes are cooking, mix together olive oil, lemon juice, salt and pepper to taste. Put hot potatoes in serving bowl and drizzle dressing over all. Top with parsley and serve hot.
