2 to 3 lbs. chicken, cut up
1/2 cup olive oil
3 cups diced cooked ham
2 garlic cloves, minced
3 small onions, chopped
3 cans (16oz) peeled whole tomatoes
2 tsp. salt
1/4 to 1/2 tsp hot pepper sauce
1 large bay leaf
2 cups diced celery
1 lb shrimp, shelled and deveined
2 cups long grain rice (white)
1/2 cup chopped parsley

Directions:

In a 5 qt. kettle, brown chicken in oil. Take chicken out of pan and brown the ham. Stir in garlic & onion, saute 5 min. Return chicken to pan, stir in tomatoes, salt, hot sauce and bay leaf. Bring to a boil, reduce heat and simmer 30 min.

Stir in celery, shrimp, white rice (making sure rice is covered by liquids) Simmer 30 min or until chicken is done. Remove bay leaf, add parsley.
