2/3 cu dark brown sugar
1/3 cu soft butter/margarine
2 eggs
3tbs buttermilk (add buttermilk powder to enrich if desired)
1 cu (2 lg) mashed bananas
2 tsp baking POWDER
1/2 tsp baking SODA
1/2 tsp salt
1 tbs strong coffee
1 tsp vanilla
pinch(es) of apple pie spice/pumpkin pie spice to taste)
1/2 cu finely chopped pecans w/ pecan powder (from food processor)
(process a bit extra on the nuts, blend w/ brn sugar and apple pie spice and sprinkle on top of batter in pan before baking)

Mix all ingredients, or if you prefer, cream sugar, eggs and butter, add buttermilk, vanilla, coffee and the tad of buttermilk powder if you choose to use it...you can use pure buttermilk powder mixed with water as instructed on the can, and add a tad more than the can calls for...this is better than having to go to the store for fresh buttermilk, anyway.... then add all dry ingredients alternating with bananas. Use spices as desired. I top it with a sort of sugar/nut streussel topping. Bake in a greased loaf pan at 350 for about an hour to an hour an 10 minutes / till a wooden skewer/toothpick comes out clean. If it is still gooey after about an hour/hour 10', I turn off the oven and just leave it in there till cooler, and it is done perfectly without burning. This works on other baked goods too.

Before baking, let stand about 15 to 20 min after pouring into loaf pan. You can also make muffins.
These are good with cream cheese topping or spread made with cream cheese, sour cream, powdered sugar and orange juice with a squirt of vanilla.
