Pie Crust:
2/3 c plus 2T shortening
2 cups all purpose flour
1 tsp salt
4 to 5 T ice water

Cherry filling:
1 1/3 c sugar
1/3 c all purpose flour
2 cans (16 oz each) pitted red tart cherries, drained
1/4 tsp almond extract
2 T butter




Directions:
Directions:
Preheat oven 350 degrees. Prepare pie crust. Roll dough for bottom crust. Mix flour and sugar. Stir in cherries. Turn into pastry lined pie plate; sprinkle with almond extract and dot with butter. Cover with top pastry; seal and flute edge. Cut slits in the top for steam to escape. Cover edge with 2-3" strip of aluminum foil to prevent excessiving browning; remove final 15 minutes of baking. Bake 35 to 45 minutes.
