2 1/2 pounds sifted all-purpose four
3 beaten eggs
1 tspn. salt
8 to 9 Tblspns. cold water

Directions:
Directions:
Place sifted flour and salt into a medium bowl. Make small well in flour and salt. Add eggs and 4 Tblspns. water (cold). Beat vigorously. Gradually add remaining water. Knead well with hands. If dough is too stiff, add a little more water. Knead on lightly floured surface, until dough is smooth and elastic. Cover with a bowl and let rest for 30 minutes. Divide dough into four balls. Keep covered until ready to use.

Mom made great pasta. I tried once and failed. I used semolina instead of flour. We used to have homemade pasta regularly back in my grandmother's day and mom made it occasionally. It takes work. We have a pasta machine, so the machine did all the cutting. There's nothing like homemade pasta.
