Brine:
2 c. vinegar
1 1/2 c. sugar
1 tsp. pickling spice

Directions:
Directions:
Step 1: Put fish in bowl and sprinkle canning salt between fish for 48 hours.
Step 2: Take out and rinse w/ water and soak in clean water for 24 hours
Step 3: Take out from water and put in pure white vinegar for 24 hours.
Step 4: Take out from vinegar, peel skin off and cut in small pieces and pack in jar. Pour brine in jar, add onion, slice of lemon, some green pepper.

Brine:
Bring to a boil and cool. Pour over fish, eat after 3 - 4 days.
